In Italy, you need cash and the best way to get it is to withdraw money from an ATM. If you need to pay for a coffee, a slice of pizza, or a small family business such as a Bed and Breakfast, even in a big city, you may be asked to pay cash because not all businesses accept cards payments.

We have visited Rome many times over the years and always find more to see and do. Certainly, 3 days in Rome is not enough to see absolutely everything that the city has to offer, but it's definitely enough to see all the highlights if you manage your time effectively.

Once you're there, passport control can take anything from thirty to around ninety minutes. Fiumicino is often under-staffed and you may well find only two or three immigration booths open to deal with hundreds of passengers.

If all you need to do is clear security and wander over to your gate two hours is plenty of time. Two hours is the recommended time for Schengen flights. I've never seen it take that long and always end up waiting for my plane. OTOH I'm fairly at home when using FCO.
